Starting with a cheese press, which you'll get access to at farming level 6, you're going to want to focus on processing both cow and goat milk. The basic idea is pretty straightforward, but there's some depth to maximizing your profits here. Regular milk turns into regular cheese, but large milk creates gold-quality cheese, which is definitely worth waiting for (this is why keeping your animals happy is so important).

The really interesting part comes when you get access to the cellar, because that's when things get profitable. You see, both regular and goat cheese can be aged in casks to reach iridium quality. Goat cheese is particularly valuable here, taking 14 days to reach iridium quality and selling for a whopping 800g per piece. If you've picked up the artisan profession, which you absolutely should consider, that number jumps up to 1,120g (this is because artisan goods get a 40% price boost).

Something that's maybe interesting - while you're waiting for your cheese to age, you can use regular cheese for cooking. Pepper poppers give you a farming buff, which helps create a nice little productivity loop. The whole process takes about 200 minutes in-game for the initial cheese making, so you might want to set up multiple presses near your barn to keep things moving.

For the best results, focus on getting large milk from happy animals, and don't forget to pet them daily. The difference between regular and large milk is significant enough that it's worth the extra effort to maintain high animal friendship. Once you get to late game, wine might become more profitable, but cheese remains a reliable source of income throughout your farm's development.
