If you're looking for quicker turnaround, goat cheese is fantastic at 40 gold per day and only needs 14 days to hit iridium quality.
Regular cheese (inside casks) work well too especially early game, and pineapple wine rounds out your top choices for decent profits. Something worth knowing - you can either go for 125 casks which are easier to manage, or squeeze in 189 if you don't mind the extra work getting to them all. Filling empty casks with cheese between wine batches keeps your profits rolling, and having the artisan profession really makes a difference with that 40% price boost.
