I know what you're wondering about resetting skills, and here's the thing - you actually can't respec or reset your skill points once they're spent (this is because the game wants you to commit to your choices and grow naturally). But don't worry too much about making wrong choices, because you'll eventually earn enough xp to unlock everything in your skill trees anyway.
Something interesting to keep in mind - those early abilities you unlock, like the glacial rake for your axe and hyperion grapple for the blades, stay really powerful throughout your journey (this is by design, so you're never penalized for early choices). The game actually encourages you to master what you've got through the skill labors system, where moves like serpent's snare get even better the more you use them.
If you're looking for combat variety, it comes more from experimenting with different weapons, like that awesome draupnir spear, and playing around with status effects (mixing frost and immolation can be devastating when done right). Just focus on unlocking what feels right for your playstyle, and remember - every skill point spent is building toward your complete arsenal.
