So here's the deal with hijacking cars during fights - you actually cant do it directly while in combat but there are some pretty cool alternatives that work really well. I found that getting the carhacker stuff with a good cyberdeck opens up tons of options, like making cars explode or go crazy which is always fun to watch. The trick is getting those tier 4 decks first though.

If you're more into the direct approach, targeting weak points like tires or engines works great, and i've had good results using tech weapons to punch through those armored windows. Something that surprised me is how effective the mounted weapons can be, especially if you grab those missile launchers from dogtown, they're absolutely brutal.

Speaking of dogtown, those el capitan missions are probably your best bet if you really want to actually steal specific cars, just gotta be smart about avoiding combat. Oh and if you're feeling creative, there's this neat thing where you can spook people out of parked cars with grenades without getting the cops called but honestly the hacking approach is way more reliable.

One thing that's been working really well for me is using those fury road ram attacks, especially with the armored vehicles - you take way less damage than youd expect. And if you're into modding the game there's some cool stuff on nexus that adds even more vehicle combat options, but the base game gives you plenty to work with already.
