I've found a good method for these blind enemies that makes things much simpler. Approach while crouched but barely move the stick forward, since their hearing is incredibly sensitive. When you're right behind them just tap square (or the context button on pc) to take them down instantly, which is different from regular enemies where you need that extra kill input. You'll want to keep listen mode active to track their movements, and stay low behind stuff like counters or in grass for cover

Something worth noting is that their fungal plating means you really don't want to get spotted and end up facing them head-on. Instead, watch their patrol patterns carefully, move super slow when you're close, and maybe use bottles as distractions if you need to create an opening. The key is being patient with your movement speed, since rushing even while crouched will get you caught pretty quick
