When you're stuck with too much loot (which happens to everyone sooner or later), there's actually a pretty clever way to handle it. On pc with keyboard and mouse, hitting shift and left click will drop single items, while control and left click drops entire stacks at once – this is especially useful when you're carrying too many potions or arrows. If you're using a controller on pc, you'll want to tap x or square depending on your controller layout, and holding it down handles the whole stack (this works the same way as the console versions).

Speaking of consoles, xbox players can just tap x while playstation folks use square – and just like the pc version, holding the button down will drop everything in that stack. It's worth noting that items always drop right in front of you, which is really helpful if you accidentally drop something important or need to pick stuff back up later (happens more often than you'd think).

A neat little detail most players miss is that the controls are always shown at the bottom of your inventory screen, so you don't have to memorize everything right away. Also try to drop heavier items first when you're over-encumbered, since that'll get you mobile again faster (those armor pieces and weapons are usually the main culprits).
