Rapier Class & the Firestar Track.

Go to the player-select screen, highlight "One Player," then
enter the codes:

Rapier Class: Simultaneously hold R2, L2, Left, Start, and
              Select. While still holding the buttons, tap X.

Firestar Track: Simultaneously hold R1, L1, Right, Start,
                Circle, Square. While holding the buttons, tap X.
